Blueberry Chia Pudding
We all know breakfast is the most important meal of the day but In today’s busy schedule, sometimes it is hard to manage taking out time In the morning to prepare the breakfast and savor it properly. And I don’t know about you guys but my body is not able to function properly without breakfast. Breakfast just fills me with so much energy that taking that day becomes easy for me. And from my personal experience, it is very difficult to take out time in the morning to prepare breakfast let alone enjoy it properly. But with time, I have realized the importance of make-ahead breakfasts. And there are so many amazing options to try on like overnight oatmeal, granola bars, Chia Pudding.
And if you are a fan of healthy eating, I am sure you would have heard about Chia Seeds. These tiny little seeds pack tons of Omega 3 Fatty Acids, Fiber, Manganese, Phosphorus, Protein and more. Additionally, they have gotten a lot of hype for their ability to slow digestion, ideally making you feel full for longer. I sprinkle these magic seeds on my smoothies, smoothie-bowls but definitely Chia Puddings are my favorite way to consume Chia Seeds.
1 cup Milk (Any Kind of Milk-Plant Based, Animal Based etc.)
2 Tablespoons Chia Seeds
1 tablespoon raw sugar (Optional, can be replaced with maple syrup / Honey)
1/4 cup blueberries (or any berry of choice!)
1. Combine the almond milk, chia seeds, raw sugar and blueberries into a cup and give it a good stir. Let is set for about 10 minutes and then give it another good stir.
2. Put this mixture into the fridge, covered, overnight (or about 6 hours).
3. Pour into individual bowls, and enjoy within 24 hours.
I call it breakfast pudding because I like to start every work day with this but this can equally be treated as a dessert because it is that yummy.
